  • 2 pounds potatoes peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 cup celery chopped
  • ½ cup onion chopped
  • ¼ cup dill pickle relish
  • 4 hard-boiled eggs chopped
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 10 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, mustard, celery, onion, and pickle relish.
  3. 3. Add the cooled potatoes and chopped eggs to the bowl. Mix gently to combine.
  4. 4. Season with salt and pepper to taste. Chill in the refrigerator before serving.
