Main Ingredients
- 1 lb Beef cubed
- 1 cup Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots sliced
- 1 cup Potatoes diced
- 1 cup Bell Peppers chopped
- 4 cups Beef Broth
- 1 teaspoon Thyme dried
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Spinach chopped
1. In a large pot, brown the beef over medium heat.
2. Add the onions and garlic, cook until softened.
3. Add the carrots, potatoes, and bell peppers. Cook for another 5 minutes.
4. Pour in the beef broth, add thyme, salt, and black pepper. Bring to a boil.
5. Reduce heat and let it simmer for 1.5 to 2 hours.
6. Add the spinach in the last 10 minutes of cooking.
