Ingredients

  • 3 lb Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine
  • 4 Carrots cut into chunks
  • 4 Potatoes cut into chunks
  • 1 Onion sliced
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Preheat your oven to 275°F (135°C).
  2. 2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef roast on all sides until browned.
  3. 3. Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
  4. 4. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes.
  5. 5. Add the beef broth, thyme, and rosemary. Return the roast to the pot, and add the carrots and potatoes around it.
  6. 6. Cover the pot with a lid and place it in the preheated oven. Cook for about 4 hours, or until the meat is tender.
  7. 7. Remove from the oven and let it rest for a few minutes before serving.
