Main Ingredients
- 2 cans black beans drained and rinsed
- 1 can diced tomatoes
- 1 onion chopped
- 2 cloves garlic minced
- 1 bell pepper chopped
- 2 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoon olive oil
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, and bell pepper. Sauté until softened.
Stir in chili powder, cumin, paprika, and cayenne pepper. Cook for another minute.
Add black beans, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
