Ingredients

  • 3 large egg yolks
  • 1 tablespoon lemon juice freshly squeezed
  • ½ cup unsalted butter melted
  • 1 pinch cayenne pepper
  • 1 pinch salt

Instructions 

  1. 1. In a blender, combine egg yolks, lemon juice, and a pinch of salt. Blend for a few seconds until mixed.
  2. 2. Melt the butter in a small saucepan until hot and foamy.
  3. 3. With the blender running on low, slowly drizzle in the hot melted butter. Blend until the sauce is thick and creamy.
  4. 4. Add a pinch of cayenne pepper and blend for another few seconds. Serve immediately.
