Broccoli and Stilton Soup Recipe

- 1 head Broccoli chopped
- 1 cup Stilton cheese crumbled
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable broth
- 1 cup Heavy cream
- to taste Salt
- to taste Black pepper
1. Heat a large pot over medium heat. Add a bit of oil and sauté the chopped onion and minced garlic until soft.
2. Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 15 minutes.
3. Use a blender to puree the soup until smooth. Return the soup to the pot.
4. Stir in the crumbled Stilton cheese and heavy cream. Cook over low heat until the cheese is melted and the soup is heated through. Season with salt and black pepper to taste.
5. Serve hot, garnished with extra crumbled Stilton if desired.
