- 10 cups popped popcorn
- 1 cup brown sugar packed
- ¼ cup light corn syrup
- ½ cup unsalted butter 1 stick
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 1 teaspoon vanilla extract
Preheat oven to 250°F (120°C). Place popcorn in a large mixing bowl.
In a saucepan, combine brown sugar, corn syrup, butter, and salt. Cook over medium heat, stirring constantly, until mixture comes to a boil.
Boil without stirring for 5 minutes. Remove from heat and stir in baking soda and vanilla extract.
Pour caramel mixture over popcorn and stir to coat evenly.
Spread popcorn on a baking sheet. Bake for 45 minutes, stirring every 15 minutes.
Remove from oven and let cool completely before breaking into pieces.
