- ½ cup unpopped popcorn kernels
- 1 cup brown sugar
- ¼ cup corn syrup
- ½ cup butter
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
Preheat your oven to 250°F (120°C). Pop the popcorn kernels and place them in a large bowl.
In a saucepan, combine brown sugar, corn syrup, and butter. Bring to a boil over medium heat, stirring constantly.
Once boiling, stop stirring and let it boil for 5 minutes.
Remove from heat and stir in baking soda and vanilla extract.
Pour the caramel mixture over the popcorn and stir well to coat evenly.
Spread the coated popcorn onto a baking sheet and bake for 30 minutes, stirring every 10 minutes.
Remove from oven and let cool completely before breaking into pieces.
