Ingredients

  • ½ cup unpopped popcorn kernels
  • 1 cup brown sugar
  • ¼ cup corn syrup
  • ½ cup butter
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 250°F (120°C). Pop the popcorn kernels and place them in a large bowl.
  2. In a saucepan, combine brown sugar, corn syrup, and butter. Bring to a boil over medium heat, stirring constantly.
  3. Once boiling, stop stirring and let it boil for 5 minutes.
  4. Remove from heat and stir in baking soda and vanilla extract.
  5. Pour the caramel mixture over the popcorn and stir well to coat evenly.
  6. Spread the coated popcorn onto a baking sheet and bake for 30 minutes, stirring every 10 minutes.
  7. Remove from oven and let cool completely before breaking into pieces.
