Ingredients

  • 1 head Cauliflower chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the chopped cauliflower to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the cauliflower is tender.
  3. 3. Use a blender to puree the soup until smooth. Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper to taste.
  4. 4. Heat the soup over low heat until warmed through. Serve hot.
