  • 4 cups potatoes, peeled and diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup crushed cornflakes
  • ¼ cup melted butter

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the potatoes, cheddar cheese, sour cream, and cream of chicken soup. Mix well.
  3. Transfer the mixture to a greased baking dish.
  4. In a small bowl, mix the crushed cornflakes with melted butter. Sprinkle this over the potato mixture.
  5. Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is bubbly.
