Cherries Jubilee Recipe
A classic dessert made with cherries and liqueur, flambéed and served over vanilla ice cream.

Main Ingredients
- 2 cups pitted cherries fresh or frozen
- ½ cup sugar
- ¼ cup kirsch or brandy
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch optional, for thickening
- 1 quart vanilla ice cream
1. In a skillet, combine cherries, sugar, and lemon juice. Cook over medium heat until the cherries release their juices and the sugar dissolves, about 5 minutes.
2. If using, dissolve cornstarch in a small amount of water and add to the skillet. Cook until the sauce thickens, about 2 minutes.
3. Remove the skillet from heat. Pour the kirsch or brandy over the cherries.
4. Carefully ignite the alcohol with a match or lighter. Let the flames burn out, shaking the skillet gently until the flames subside.
5. Serve the cherries and sauce over scoops of vanilla ice cream.
