Instructions
Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper.
In a shallow dish, combine breadcrumbs and grated Parmesan cheese.
Dip each chicken breast in olive oil, then coat with breadcrumb mixture.
Heat a skillet over medium heat and add remaining olive oil. Cook chicken until golden brown, about 3-4 minutes per side.
Transfer chicken to a baking dish. Top each piece with marinara sauce and shredded mozzarella cheese.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Serve hot, garnished with fresh basil if desired.
