Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 2 cups Water
  • 3 medium Potatoes, peeled and diced
  • 2 cups Cooked Chicken, shredded
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Heavy Cream
  • 2 tablespoon Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and water, then add diced potatoes.
  5. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  6. Add shredded chicken, salt, and black pepper. Stir well.
  7. Stir in heavy cream and cook for another 5 minutes.
  8. Garnish with chopped parsley before serving.
