Chicken with Barley Soup

Main Ingredients
- 1 lb Chicken breast diced
- 1 cup Barley
- 1 cup Carrots diced
- 1 cup Celery diced
- 1 cup Onion diced
- 4 cups Chicken broth
- 2 cloves Garlic minced
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Dried thyme
1. Heat a large pot over medium heat. Add a bit of oil.
2. Add diced chicken and cook until browned.
3. Add carrots, celery, and onion. Cook until veggies are soft.
4. Add garlic and cook for another minute.
5. Pour in chicken broth and bring to a boil.
6. Add barley, salt, pepper, and thyme. Reduce heat and simmer for 45 minutes.
7. Serve hot.
