Chinese Chicken Fried Rice Recipe

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Cooked chicken diced
- 2 Eggs beaten
- 1 cup Frozen peas and carrots
- 3 tablespoon Soy sauce
- 2 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 bunch Green onions sliced
Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
In the same wok, add the remaining oil. Add garlic and cook until fragrant.
Add the diced chicken, peas, and carrots. Stir-fry for 2-3 minutes.
Add the cooked rice and soy sauce. Stir well to combine all ingredients.
Return the scrambled eggs to the wok and mix everything together. Cook for another 2 minutes.
Garnish with sliced green onions and serve hot.
