Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • 2 tablespoon fresh dill, chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the shrimp, cherry tomatoes, cucumber, red onion, and fresh dill.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. 3. Pour the dressing over the shrimp mixture and toss to coat evenly.
  4. 4. Chill in the refrigerator for at least 30 minutes before serving.
