  • 2 Eggplants medium-sized
  • 3 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed
  • ¼ cup Fresh parsley chopped

Instructions 

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Slice the eggplants into ¼-inch thick rounds.
  3. 3. Arrange the eggplant slices on a baking sheet and brush both sides with olive oil.
  4. 4. Sprinkle with salt and black pepper.
  5. 5. Bake in the preheated oven for 25-30 minutes, until golden brown and tender.
  6. 6. In a small bowl, mix minced garlic, lemon juice, and chopped parsley.
  7. 7. Drizzle the mixture over the baked eggplant slices before serving.
