Ingredients 

Main Ingredients

  • 2 bulbs fennel chopped
  • 1 unit onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • to taste salt
  • to taste pepper
  • as needed olive oil for sautéing

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped fennel, onion, and garlic. Sauté until soft.
  3. Pour in vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth.
  6. Stir in heavy cream and season with salt and pepper.
  7. Serve hot.
