Instructions
1. Heat the wok over medium-high heat and add the vegetable oil.
2. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
3. Add the diced ham and cook for 2-3 minutes until slightly browned.
4. Push the ham to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
5. Add the cooked rice, frozen peas and carrots, and soy sauce. Stir-fry everything together for about 5 minutes until heated through.
6. Season with salt and pepper to taste. Serve hot.
