Ingredients 

Main Ingredients

  • 1 cup Acini di Pepe pasta
  • 1 cup Sugar
  • 1 tablespoon All-purpose flour
  • ½ teaspoon Salt
  • 1 cup Pineapple juice
  • 1 unit Egg, beaten
  • 1 tablespoon Lemon juice
  • 1 can Pineapple chunks, drained
  • 1 can Mandarin oranges, drained
  • 1 cup Mini marshmallows
  • 1 container Whipped topping

Instructions 

  1. Cook pasta according to package directions. Drain and rinse under cold water.
  2. In a saucepan, combine sugar, flour, and salt. Stir in pineapple juice and cook over medium heat until thickened and bubbly. Remove from heat.
  3. Stir a small amount of hot mixture into beaten egg, then return all to the saucepan. Cook and stir for 2 minutes more. Remove from heat and stir in lemon juice. Cool to room temperature.
  4. In a large bowl, combine cooked pasta, egg mixture, pineapple chunks, mandarin oranges, and marshmallows. Fold in whipped topping. Chill before serving.
