Ingredients 

Main Ingredients

  • 500 g mushrooms sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 L vegetable stock
  • 200 ml double cream
  • to taste salt
  • to taste black pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft.
  3. Add the sliced mushrooms and cook until they release their moisture and become tender.
  4. Pour in the vegetable stock and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.
  5. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in the double cream, and season with salt and black pepper to taste. Heat through but do not boil.
  7. Serve hot, garnished with a swirl of cream or fresh herbs if desired.
