Ingredients 

Main Ingredients

  • 4 cups Potatoes, boiled and diced
  • 1 cup Cucumber, diced
  • ½ cup Red onion, finely chopped
  • ½ cup Kalamata olives, pitted and sliced
  • ¼ cup Feta cheese, crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Boil the potatoes until tender, then drain and let cool.
  2. 2. In a large mixing bowl, combine the potatoes, cucumber, red onion, olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. 4. Pour the dressing over the potato mixture and toss to coat.
  5. 5. Chill in the refrigerator for at least 30 minutes before serving.
