  • 6 medium Potatoes peeled and quartered
  • ¼ cup Olive Oil
  • 3 cloves Garlic minced
  • 1 cup Chicken Broth
  • ¼ cup Lemon Juice freshly squeezed
  • 1 teaspoon Oregano dried
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, garlic, chicken broth, lemon juice, oregano, salt, and pepper.
  3. Add the potatoes to the bowl and toss to coat them evenly.
  4. Transfer the potatoes to a baking dish, spreading them out in a single layer.
  5. Bake in the preheated oven for 45 minutes, or until the potatoes are golden brown and tender, stirring occasionally.
  6. Serve hot, garnished with fresh herbs if desired.
