Ingredients 

Main Ingredients

  • 500 g Green Beans trimmed
  • 500 g Potatoes peeled and cubed
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
  • 1 clove Garlic minced

Instructions 

  1. 1. Boil the potatoes in a pot of salted water until tender, about 10-15 minutes. Drain and set aside.
  2. 2. In the same pot, blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
  3. 3. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper.
  4. 4. Add the cooked potatoes, green beans, and cherry tomatoes to the bowl. Toss to coat evenly with the dressing.
  5. 5. Serve the salad warm or chilled.
