Ingredients

  • 1 lb Green beans trimmed and cut into 1-inch pieces
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Diced tomatoes canned
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper freshly ground

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the green beans and diced tomatoes. Season with salt and pepper.
  5. 5. Reduce heat and let simmer for about 20 minutes, or until the green beans are tender.
  6. 6. Serve hot and enjoy!
