  • 1 lb asparagus trimmed
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • ¼ cup feta cheese crumbled
  • 2 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic minced
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh basil chopped

Instructions 

  1. Preheat grill to medium-high heat.
  2. Toss asparagus with 1 tablespoon olive oil, salt, and pepper.
  3. Grill asparagus for 5-7 minutes, turning occasionally, until tender.
  4. In a large bowl, combine grilled asparagus, cherry tomatoes, feta cheese, red onion, and basil.
  5. In a small bowl, whisk together remaining olive oil, lemon juice, balsamic vinegar, and garlic.
  6. Pour dressing over salad and toss to combine.
  7. Serve immediately.
