Grilled Asparagus Salad Recipe

- 1 lb asparagus trimmed
- 2 tablespoon olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes halved
- ¼ cup feta cheese crumbled
- 2 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- 1 clove garlic minced
- ¼ cup red onion thinly sliced
- ¼ cup fresh basil chopped
Preheat grill to medium-high heat.
Toss asparagus with 1 tablespoon olive oil, salt, and pepper.
Grill asparagus for 5-7 minutes, turning occasionally, until tender.
In a large bowl, combine grilled asparagus, cherry tomatoes, feta cheese, red onion, and basil.
In a small bowl, whisk together remaining olive oil, lemon juice, balsamic vinegar, and garlic.
Pour dressing over salad and toss to combine.
Serve immediately.
