Main Ingredients
- 2 lbs Lamb shoulder, cut into chunks
- 4 Carrots, peeled and chopped
- 4 Potatoes, peeled and chopped
- 1 Large onion, chopped
- 3 cups Beef or lamb broth
- 2 tablespoon Tomato paste
- 2 cloves Garlic, minced
- 1 teaspoon Dried thyme
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
- 2 tablespoon Olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the lamb chunks and brown on all sides. Remove and set aside.
3. In the same pot, add the onions and garlic. Cook until softened.
4. Stir in the tomato paste and cook for another minute.
5. Return the lamb to the pot. Add the carrots, potatoes, thyme, salt, and pepper.
6. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 2 hours.
7. Check seasoning and adjust if necessary. Serve hot.
