Ingredients

  • 1 kg Potatoes peeled and cubed
  • ¼ cup Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 1 clove Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. 2. Drain the potatoes and let them cool slightly.
  3. 3. In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, salt, and black pepper.
  4. 4. Add the warm potatoes to the bowl and toss to coat.
  5. 5. Sprinkle chopped parsley over the salad and toss again.
  6. 6. Serve warm or at room temperature.
