Meatballs
- ½ lb ground beef
- ½ lb ground pork
- ½ cup bread crumbs
- ¼ cup grated Parmesan cheese
- 1 egg beaten
- 2 cloves garlic minced
- 1 teaspoon salt
- ½ teaspoon black pepper
Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 8 cups chicken broth
- 1 carrot sliced
- 1 celery stalk sliced
- ½ cup small pasta like acini di pepe
- 4 cups baby spinach packed
- to taste salt and pepper
1. In a mixing bowl, combine all meatball ingredients. Form into small meatballs.
2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
3. Add chicken broth, carrot, and celery. Bring to a boil.
4. Add meatballs to the broth. Simmer for 10 minutes.
5. Add pasta and cook until tender.
6. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
