Ingredients 

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 lb shrimp, peeled and deveined
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the chicken and sausage over medium heat until browned.
  2. 2. Add the bell pepper, onion, and garlic. Cook until the vegetables are tender.
  3. 3. Stir in the rice, chicken broth, tomatoes, Cajun seasoning, and thyme. Bring to a boil.
  4. 4. Reduce heat, cover, and simmer for 20 minutes.
  5. 5. Add the shrimp, cover, and cook for another 5-7 minutes until the shrimp are cooked through.
  6. 6. Season with salt and pepper to taste. Serve hot.
