Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Pour in the chicken broth and bring to a boil.
5. Add the chopped kale and diced tomatoes. Reduce heat and simmer for 20 minutes.
6. Season with salt and black pepper to taste. Serve hot.
