  • 1 cup sugar
  • 0.5 cup unsalted butter, softened
  • 3 large eggs
  • 0.5 cup key lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Instructions 

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the key lime juice and lime zest.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
