Crust
- 1.5 cups Graham Cracker Crumbs
- ¼ cup Granulated Sugar
- ½ cup Melted Butter
Filling
- 24 oz Cream Cheese softened
- 1 cup Granulated Sugar
- 1 cup Sour Cream
- 3 tablespoon All-purpose Flour
- 4 Large Eggs
- ½ cup Key Lime Juice freshly squeezed
- 1 tablespoon Key Lime Zest
Preheat your oven to 325°F (163°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
In another bowl, beat the cream cheese and sugar until smooth. Add the sour cream and flour, mixing well.
Add the eggs one at a time, beating after each addition. Stir in the key lime juice and zest.
Pour the filling over the crust. Bake for 60 minutes or until the center is almost set.
Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
