Leftover Chicken Croquettes

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- 1 cup Breadcrumbs divided
- 1 Egg beaten
- ½ cup Onion finely chopped
- ¼ cup Parsley chopped
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoon Olive oil
1. In a large mixing bowl, combine the shredded chicken, mashed potatoes, ½ cup of breadcrumbs, beaten egg, chopped onion, parsley, salt, and pepper. Mix well until all ingredients are thoroughly combined.
2. Shape the mixture into small patties or croquettes.
3. Coat each patty in the remaining breadcrumbs.
4. Heat the olive oil in a frying pan over medium heat.
5. Fry the croquettes in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
6. Remove from the pan and drain on paper towels. Serve hot.
