Ingredients 

Crust

  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • ½ cup powdered sugar

Filling

  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon baking powder

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, 2 cups of flour, and powdered sugar. Press mixture into the bottom of a greased baking dish.
  3. Bake crust for 15-20 minutes or until lightly golden.
  4. In another bowl, whisk together eggs, granulated sugar, ¼ cup of flour, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes or until the filling is set.
  6. Let cool completely before cutting into bars. Dust with powdered sugar if desired.
