- 4 cups beetroot, cooked and grated
- 2 cups kefir
- 1 cup cucumber, diced
- 4 tablespoon dill, chopped
- 4 tablespoon green onions, chopped
- 2 teaspoon salt to taste
- 4 units hard-boiled eggs, halved for serving
1. In a large mixing bowl, combine the grated beetroot, kefir, diced cucumber, chopped dill, and green onions.
2. Add salt to taste and mix well.
3. Chill the soup in the refrigerator for at least 1 hour before serving.
