Ingredients 

Main Ingredients

  • 2 lbs Beef tripe cleaned and cut into pieces
  • 1 can Hominy drained and rinsed
  • 1 whole Onion chopped
  • 4 cloves Garlic minced
  • 2 tablespoon Oregano
  • 2 tablespoon Salt
  • 1 tablespoon Pepper
  • 1 tablespoon Paprika
  • 8 cups Water

Instructions 

  1. 1. In a large pot, bring water to a boil.
  2. 2. Add tripe, onion, garlic, oregano, salt, pepper, and paprika.
  3. 3. Reduce heat and simmer for 2.5 hours.
  4. 4. Add hominy and cook for another 30 minutes.
  5. 5. Serve hot with lime wedges and chopped cilantro.
