Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 4 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 can Diced Tomatoes
  • 1 cup Corn frozen or fresh
  • 1 cup Black Beans cooked
  • to taste Salt and Pepper
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  2. 2. Add the chicken breast to the pot and cook until browned on all sides.
  3. 3. Add the carrots, celery, chicken broth, cumin, and chili powder. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  4. 4. Remove the chicken breast from the pot, shred it with two forks, and return it to the pot.
  5. 5. Add the diced tomatoes, corn, and black beans. Simmer for another 10 minutes.
  6. 6. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
