Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 cup green lentils rinsed and drained
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • 1 cup vermicelli noodles broken into small pieces
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.
  2. Add the garlic, turmeric, cinnamon, ginger, black pepper, and cumin. Cook for another minute, stirring constantly.
  3. Add the lentils, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 1 hour.
  4. Add the cilantro, parsley, and vermicelli noodles. Cook for another 10-15 minutes, until the noodles are tender.
  5. Stir in the lemon juice and season with salt to taste. Serve hot.
