Moroccan Harira Soup Recipe

- 2 tablespoon olive oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 cup green lentils rinsed and drained
- 1 can chickpeas drained and rinsed
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 cup fresh cilantro, chopped
- 1 cup fresh parsley, chopped
- 1 cup vermicelli noodles broken into small pieces
- 1 tablespoon lemon juice freshly squeezed
- to taste salt
Heat the olive oil in a large pot over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.
Add the garlic, turmeric, cinnamon, ginger, black pepper, and cumin. Cook for another minute, stirring constantly.
Add the lentils, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 1 hour.
Add the cilantro, parsley, and vermicelli noodles. Cook for another 10-15 minutes, until the noodles are tender.
Stir in the lemon juice and season with salt to taste. Serve hot.
