Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cups bok choy, chopped
  • 2 tablespoon soy sauce
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  3. Add mushrooms and cook until they start to soften, about 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add bok choy and soy sauce, simmer for 5-7 minutes until bok choy is tender.
  6. Season with salt and pepper to taste. Serve hot.
