Instructions
Heat olive oil in a large pot over medium heat.
Add garlic and ginger, sauté for 1-2 minutes until fragrant.
Add mushrooms and cook until they start to soften, about 5 minutes.
Pour in vegetable broth and bring to a boil.
Add bok choy and soy sauce, simmer for 5-7 minutes until bok choy is tender.
Season with salt and pepper to taste. Serve hot.
