Ingredients 

Main Ingredients

  • 2 cups Rocket (Arugula)
  • 1 cup Pineapple chunks fresh or canned
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Feta cheese, crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 pinch Salt to taste
  • 1 pinch Black pepper to taste

Instructions 

  1. In a large mixing bowl, combine the rocket, pineapple chunks, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!
