  • ¼ cup butter melted
  • ½ cup brown sugar
  • 1 can pineapple slices drained
  • 10 maraschino cherries
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup butter softened
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup milk

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Pour melted butter into a 9-inch round cake pan. Sprinkle brown sugar evenly over the butter.
  3. Arrange pineapple slices over the brown sugar. Place a cherry in the center of each pineapple slice.
  4. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. In another bowl, whisk together flour, baking powder, and salt. Add to the creamed mixture alternately with milk, beginning and ending with the flour mixture.
  7. Pour batter over the pineapple and cherries in the pan, spreading evenly.
  8. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 5 minutes, then invert onto a serving plate. Serve warm.
