Ingredients

  • 500 g Pork tenderloin sliced thin
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber sliced
  • 1 cup Red onion thinly sliced
  • 4 cups Mixed greens
  • ¼ cup Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  1. 1. Heat a skillet over medium-high heat and cook the pork slices until browned and cooked through, about 5-7 minutes per side.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and mixed greens.
  3. 3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
  4. 4. Add the cooked pork to the salad and drizzle with the dressing. Toss to combine.
