Ingredients 

Main Ingredients

  • 1 lb Kale chopped
  • 1 lb Potatoes peeled and diced
  • 1 lb Chorizo sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the chorizo slices and cook until they start to brown.
  3. 3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Stir in the chopped kale and cook for another 10-15 minutes, until kale is tender. Season with salt and pepper to taste.
  5. 5. Serve hot and enjoy!
