Ingredients 

Main Ingredients

  • 2 lbs red potatoes quartered
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 2 tablespoon fresh dill chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 30 minutes or until golden and tender. Let cool.
  4. In a large bowl, mix mayonnaise, mustard, and vinegar.
  5. Add roasted potatoes, celery, red onion, and dill. Toss to coat.
  6. Chill in the fridge for at least 1 hour before serving.
