Main Ingredients
- 2 cups Shoepeg Corn drained
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red Onion finely chopped
- ¼ cup Fresh Cilantro chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lime Juice freshly squeezed
- 1 teaspoon Salt
- ½ teaspoon Black Pepper freshly ground
In a large mixing bowl, combine the shoepeg corn, cherry tomatoes, cucumber, red onion, and cilantro.
In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
Pour the dressing over the corn mixture and toss to coat evenly.
Chill in the refrigerator for at least 30 minutes before serving.
