Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 tablespoon Olive oil
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 1 cup Cooked rice
- 1 cup Black beans, drained and rinsed
- 1 cup Shredded lettuce
- 1 cup Diced tomatoes
- 1 cup Shredded cheese
- 4 large Flour tortillas
Heat the olive oil in a skillet over medium heat.
Add the shrimp, chili powder, and cumin. Cook until shrimp is pink and cooked through, about 5 minutes.
In a mixing bowl, combine the cooked rice and black beans.
Warm the tortillas in a dry skillet or microwave.
Assemble the burritos by placing a portion of shrimp, rice and beans, lettuce, tomatoes, and cheese on each tortilla. Roll up and serve.
