Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 cup Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese
  • 4 large Flour tortillas

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the shrimp, chili powder, and cumin. Cook until shrimp is pink and cooked through, about 5 minutes.
  3. In a mixing bowl, combine the cooked rice and black beans.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Assemble the burritos by placing a portion of shrimp, rice and beans, lettuce, tomatoes, and cheese on each tortilla. Roll up and serve.
