Instructions
1. Place all ingredients in a large pot.
2. Bring to a boil, then reduce to a simmer.
3. Simmer for 45 minutes, skimming off any foam.
4. Strain the stock through a fine mesh strainer.
5. Use immediately or store in the fridge for up to 3 days, or freeze for up to 3 months.
