Ingredients 

Main Ingredients

  • 1 lb Shrimp shells from about 2 pounds of shrimp
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 1 medium Carrot chopped
  • 2 cloves Garlic smashed
  • 8 cups Water
  • 1 teaspoon Salt
  • 1 teaspoon Black peppercorns
  • 2 sprigs Thyme
  • 1 bay leaf Bay leaf

Instructions 

  1. 1. Place all ingredients in a large pot.
  2. 2. Bring to a boil, then reduce to a simmer.
  3. 3. Simmer for 45 minutes, skimming off any foam.
  4. 4. Strain the stock through a fine mesh strainer.
  5. 5. Use immediately or store in the fridge for up to 3 days, or freeze for up to 3 months.
