Main Ingredients
- 1 lb beef stew meat cut into bite-sized pieces
- 1 cup barley
- 4 cups beef broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt or to taste
- 0.5 teaspoon black pepper or to taste
- 2 cups water
1. In a slow cooker, combine beef, barley, beef broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
2. Add water and stir to combine.
3. Cover and cook on low for 8 hours or until beef and barley are tender.
4. Adjust seasoning with salt and pepper if needed before serving.
