  • 1 lb beef stew meat cut into bite-sized pieces
  • 1 cup barley
  • 4 cups beef broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper or to taste
  • 2 cups water

Instructions 

  1. 1. In a slow cooker, combine beef, barley, beef broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  2. 2. Add water and stir to combine.
  3. 3. Cover and cook on low for 8 hours or until beef and barley are tender.
  4. 4. Adjust seasoning with salt and pepper if needed before serving.
