  • 1 lb Baby potatoes
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cloves Garlic, minced
  • 2 tablespoon Fresh parsley, chopped

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and place them on a baking sheet.
  4. Use a potato masher to gently smash each potato.
  5. Drizzle olive oil over the smashed potatoes, then sprinkle with salt, pepper, and minced garlic.
  6. Bake in the preheated oven for 20-25 minutes, until crispy and golden.
  7. Remove from the oven and sprinkle with fresh parsley before serving.
